this modern veg

I think I should just write a short post to get things rolling and outline some of the things I’m hoping to have on this site.  My first project will be experimenting with spherification. I think this could be a great way to experiment with creating new textures. I’m also going to be looking into vacuum packing and possibly sous-vide as I’m really interested to see what it will do to things like tofu and mushrooms, especially from the point of view of injecting flavour. I’ll be looking into some more exotic gelling agents to try and create dishes without the use of gelatine. Anyways, I’m always keen to hear what people think, so please feel free to comment.
